Adam started his career in the hospitality industry at the age of fourteen, when his parents opened Shoe’s Pizzeria. His love for the industry grew over the next four years, before attending The Culinary Institute of America (Hyde Park, NY) where he received an Associate’s Degree in Culinary Arts and a Bachelor’s Degree in Business Administration with a Concentration in Italian Cuisine. One of his favorite memories at The Culinary Institute was spending a semester in Puglia, Italy learning about the cuisine, culture and wine. Since graduation in 2017, he has worked in Chicago at The Aviary, Eataly, and BLVD before deciding to return to Valparaiso to open Scarpe. Adam is currently an Introductory Level Sommelier (CMS) with hopes of obtaining his Certified in 2021.
