Olivia started her career at the age of thirteen at her uncle's restaurant, Chang Express in Elk Rapids, Michigan. Her passion for cooking blossomed in high school when she had the opportunity to work with her mentor, a Certified Master Chef and compete nationally while representing the state of Georgia. She attended The Culinary Institute of America where she received an Associate's Degree in Culinary Arts and a Bachelor's Degree in Applied Food Studies with a Concentration in Italian Cuisine. While studying abroad in Italy, Olivia learned the importance of locality and freshness of produce as well as the diversity and influences in each of the twenty regions in Italy. Since graduation in early 2018, she has worked in Chicago at Local Foods where she was the Assistant Cafe Manager before deciding to return to Valparaiso to open Scarpe with the Shoemaker family.
